From Garden To Table: A Delicious Burrata Salad Made Fresh

By far the best part of growing a vegetable garden, is enjoying the fruits of your labor! Back when I lived in Miami especially, I loved growing (and eating!) my own greens. I haven’t gotten any growing in quite some time, but I really wanted to share this recipe because it is SO easy and delicious! Not only is this salad bursting with flavor, but when using your own produce, you can guarantee it is so much healthier than anything you could ever purchase in a store! Let’s jump right into the recipe!

Ingredients

  • Your homegrown leafy greens (I use arugula, mustard greens, and butter lettuce)
  • Green onions
  • Tomatoes
  • Peppers if you have them (bell, hot, sweet, they all taste delicious!)
  • Parsley
  • Burrata cheese
  • Your choice of dressing (Just oil and vinegar or lemon juice tastes amazing!)

Recipe

Step One

Chop up your produce. I like to chop my lettuce bite-sized, tomatoes, onions, peppers diced small, and the parsley very fine.

Step Two

Lay the greens in a plate or bowl, add peppers and tomatoes on top, then green onions, then the burrata. Once I have everything laying beautifully, I then sprinkle the parsley all over the veggies and cheese!

Step Three

I like to make my own dressing using 1 clove of garlic, 1 tbsp lemon juice/vinegar, and 1 tbsp olive oil. You can easily adjust the ratio to your taste buds! Drizzle over your salad and that is it!

A Final Word

When I was making these salads it was hot and humid in Miami and all of my greens were healthy and delicious. I had around 3 of each plant, and I was able to eat a garden-fresh salad every other day with no problem! As long as you cut your greens properly, (read more about that here!) when harvesting, your plant will continue to grow new leaves, and your salads will be this good every time you make one!
